You have a cast iron skillet, a strip steak from the supermarket and about forty minutes before people want to eat. This page gets you to one steak with a dark, even crust and a middle you chose on purpose, verified with a thermometer instead of a guess. It also sorts the published numbers, because the sources disagree more than you would expect, and a couple of the loudest ones were written for a kitchen with a commercial extractor hood over the range.

Dry surface, hot pan. Everything after that is detail

The crust on a seared steak comes from the Maillard reaction, the browning of proteins and sugars at high heat, which Lodge names as the chemistry behind both the color and the flavor. It needs two things you control: a surface with no free water on it, and a pan hot enough to brown before the inside overcooks.

Water is the enemy, and every serious source says so in its own words. ThermoWorks puts it flatly: a "wet steak will take a long time to brown". Lodge warns against crowding the pan because the trapped steam interferes with browning. The technique write-up at beef-steak.com says wet steaks steam rather than brown, full stop. Here is what that means at the stove: a steak that goes in with packet moisture on it hisses gently, goes gray at the edges, and by the time the surface has dried out enough to start browning, the middle has cooked past where you wanted it.

The pan side of it has a number. ThermoWorks gives roughly 375°F (191°C) as the minimum surface temperature at which browning happens fast enough to be useful, and adds that hotter is better. The Iron Patina puts the ideal searing band at 400°F to 450°F. So the target is a pan comfortably over 400°F and a steak whose surface you have dried twice. Hold those two and the rest of this page is bookkeeping.

Before you turn on the burner

Nothing here is specialist. The thermometer is the only item people skip, and it is the one that decides whether this works.

  • A 10 to 12 inch cast iron skillet

    Both beef-steak.com and The Iron Patina recommend this size, matched to your burner, and both cap it at one or two steaks at a time.

  • A steak 1 to 1.5 inches thick

    Ribeye, New York strip, sirloin or filet. beef-steak.com calls 1 to 1.5 inches the easy range: under an inch cooks through before a crust forms, over 1.5 inches wants a reverse sear or an oven finish. Blair Lonergan at The Seasoned Mom narrows it further, to "1 to 1 ¼ inches thick for the best balance of crust and doneness", on a 10 to 12 ounce strip.

  • An instant-read or probe thermometer

    FSIS is blunt about the alternative: "Appearance and color are not reliable indicators of safety or doneness." A dial or digital thermometer also stops you overcooking, not just undercooking.

  • A neutral oil with a high smoke point

    WebstaurantStore sets the bar at a smoke point over 400°F and names peanut, canola, grapeseed and avocado. Lodge uses canola "because of its high smoke point". The Seasoned Mom says vegetable or avocado and tells you to keep olive oil out of it.

  • Salt, pepper, and 2 tablespoons of butter if you want to baste

    The Seasoned Mom uses 2 tablespoons of salted butter, added after the first flip. Lodge adds crushed garlic, rosemary or thyme at the same point.

  • Paper towels and tongs

    Two rounds of paper towels, and tongs you can flip with. The Iron Patina flags aggressive metal tongs as a way to gouge a pan's seasoning.

Time, end to end: 15 to 30 minutes of salting and drying, 5 to 10 minutes to preheat the pan, 8 to 10 minutes of actual cooking for a steak of this thickness according to The Seasoned Mom, and a rest of 5 to 10 minutes. Call it forty minutes, most of which is not hands-on.

The first steak, step by step

This is written for a 1 to 1.25 inch strip or ribeye done entirely on the stovetop, with an oven finish held in reserve. Read it once before you start, because steps 6 through 9 happen quickly.

1. Dry the steak, all over. Pat every face and both edges with paper towels, the way Lodge and ThermoWorks both instruct. You know it worked when the second sheet of paper towel comes away almost dry.

2. Salt it, then leave it alone. ThermoWorks salts the dried steak and lets it sit while the oven preheats, then pats away any moisture that has come back to the surface just before cooking. America's Test Kitchen also salts before its room-temperature rest. On how long that rest should be, Lodge says at least 15 minutes out of the fridge, The Seasoned Mom says 30, and ThermoWorks disagrees with both, preferring a steak still below 40°F straight from the refrigerator. I would not spend an argument on it: the drying matters more than the starting temperature. What does matter is the ceiling. FSIS's danger zone guidance puts rapid bacterial growth between 40°F and 140°F, with numbers doubling in as little as 20 minutes, and caps unrefrigerated raw meat at 2 hours, or 1 hour if the room is above 90°F. Fifteen to thirty minutes sits well inside that. Two hours on the counter does not.

3. Heat the oven to 350°F. Lodge and ThermoWorks both use 350°F as the finishing temperature. On a 1 to 1.25 inch steak you may not need it. On anything approaching 1.5 inches you will, and it costs nothing to have it hot.

4. Preheat the dry pan, empty, on medium-high. Lodge says 5 to 6 minutes and so does ThermoWorks. beef-steak.com says 7 to 10 minutes, specifically so the whole cooking surface comes up rather than just the middle over the flame. The Iron Patina goes further again with a staged ramp of 5 minutes low, 5 medium, then 3 to 5 on medium-high, 13 to 15 minutes in total. Cast iron is slow and the longer figures are there for a reason, so give it the 7 to 10. No oil in the pan yet: The Iron Patina lists oiling a cold pan as a top mistake.

5. Test the pan with water. Lodge's test is a few droplets that should sizzle and vanish almost instantly. The Iron Patina describes the hotter version: above about 380°F, droplets bead up and skitter across the surface instead of flashing away, which is the Leidenfrost effect. Either reading means you are in business. You know it worked when water does one of those two things. If a droplet sits and slowly boils, keep waiting.

6. Pepper the steak, oil the pan. ThermoWorks holds the pepper and the oil until this moment, so neither sits drawing moisture back to the surface during the salting rest. How much oil is the one question my sources won't settle. WebstaurantStore says roughly half a cup for a 12-inch skillet, which is a foodservice number and will fill a domestic kitchen with smoke. America's Test Kitchen argues for a generous amount rather than a thin film, on the grounds that a steak contracts unevenly as it cooks and the oil keeps the meat in contact with the pan where air gaps would otherwise open up. That argument is good and the half cup is not necessary to honour it. Pour enough to move when you tilt the pan, and stop well short of a pool. You know it worked when the oil shimmers and is just beginning to smoke, which is ATK's cue to start.

7. Lay the steak down away from you and do not touch it. The Iron Patina wants a full 2 to 3 undisturbed minutes to build the crust. Lodge sears 2 minutes a side, ThermoWorks 3, The Seasoned Mom 4 on the first side and 2 on the second, and beef-steak.com gives 2 to 4 minutes a side for this thickness depending on how you want it. Three minutes on the first side is the middle of that and it is where I would start. You know it worked when the pan roars the instant the meat lands. A polite sizzle means the pan was not hot enough, and you are now steaming.

8. Flip once, at three minutes. Look at the seared face before you commit to the second side: you want it evenly dark, not patchy.

9. Butter-baste in the last minute or two. The Seasoned Mom's method is the clearest: drop the heat to medium, add 2 tablespoons of salted butter, and "as it melts and foams, tilt the pan and spoon the butter over the steaks repeatedly for about 1 to 2 minutes." Lodge adds crushed garlic and a sprig of rosemary or thyme at the same moment. WebstaurantStore describes the same move with a spoon, using the hot oil and the steak's own rendered juices. The timing is not decorative: beef-steak.com lists early butter as a standing mistake, because the milk solids burn and smoke long before the steak is done.

10. Take its temperature. FSIS's grilling guidance says to read the thickest part, around 1.5 to 2 inches deep, away from bone, fat and gristle. On a steak an inch and a quarter thick, that means entering from the edge and running the probe toward the center. ThermoWorks puts the probe in after the second flip and leaves it there.

11. Finish in the oven if it needs it. Lodge's figure is the useful one: a 1.5 inch steak, seared 2 minutes a side, takes about 4 more minutes in a 350°F oven to reach medium. ThermoWorks does the same finish but runs it off a thermometer alarm rather than a clock, which is better if you have the gear.

12. Rest it. Five minutes, loosely tented with foil, per ThermoWorks, Lodge and The Seasoned Mom. beef-steak.com widens that to 5 to 10 minutes by size. WebstaurantStore says a flat 10. The floor is not a matter of taste: FSIS requires a minimum 3-minute rest on whole beef cuts after they hit temperature, because the meat holding or continuing to rise is part of what destroys pathogens.

13. Let the pan cool before you wash it. The Iron Patina gives it 15 to 20 minutes, and warns against hitting a very hot skillet with cold liquid, which risks thermal shock to the iron.

The temperatures, and where the sources fall out

Pull the steak below your target, because it keeps cooking. ThermoWorks says the internal temperature rises about 10°F during a foil-tented rest and tells you to pull a full 10°F early. The Seasoned Mom says a few degrees. America's Test Kitchen pulls at 120°F to 125°F. For a steak this thin I would take the smaller margin and read it again after the rest, because the 10 degree figure belongs to a thicker steak coming out of a 350°F oven with more stored heat in it.

The spread in that middle row is the point. WebstaurantStore's "medium" is 150°F and Lodge's tops out at 144°F, and those are not the same steak. Pick one source's ladder and stay on it rather than averaging across them.

Then there is the line none of them set. FSIS's safe minimum for whole beef cuts is 145°F, measured with a thermometer before the steak comes off the heat, followed by at least three minutes of rest. Every medium-rare target in the table above is ten to fifteen degrees below that. I am not going to pretend otherwise, and you should know that cooking to 130°F is a departure from published federal guidance rather than an oversight in it. For context on the other direction, ground beef needs 160°F with no rest specified, because grinding spreads surface bacteria through the meat in a way that whole muscle does not.

One thing the thermometer settles for good: color. FSIS says a steak cooked to 145°F can still be pink in the middle, that the pink comes from how the protein myoglobin has reacted during cooking, and that the same internal temperature can look done or underdone depending on that reaction. The color of the juices tells you nothing either. That is why the steak gets a number and not a look.

Four ways the first one goes wrong

The surface was still wet. How you know: the steak went in with a polite hiss instead of a roar, the exterior turned gray-brown rather than dark, and there is liquid in the pan. What to do: nothing saves it mid-cook. Next time, dry it once when it comes out of the packet and again right before it goes in the pan, which is exactly ThermoWorks' two-pass sequence.

The pan was not hot enough. How you know: pale, weak browning even though you did everything else right, which beef-steak.com names as the signature of an underheated skillet. What to do: use the water test before every sear, and give the pan 7 to 10 minutes rather than 5. Rushing the preheat, The Iron Patina notes, leaves you with a hot patch over the burner and cool iron everywhere else.

You cooked two steaks in a pan that fits one. How you know: gray bands where the steaks were close together, and steam rising instead of smoke. What to do: Lodge says crowding traps steam and interferes with the sear, and beef-steak.com caps a 10 to 12 inch pan at one or two steaks. Cook in batches and hold the first one somewhere warm. Also, do not put a lid on: WebstaurantStore says never cover the pan, because trapped steam stops a crust forming.

You cut it straight away. How you know: a puddle on the board and a steak that tastes drier than it should. What to do: rest it. beef-steak.com attributes the juice loss directly to cutting immediately, and FSIS makes three minutes the safety floor rather than a suggestion.

Once you've got one good steak

The next thing worth learning is the gray band, and the best argument against the method above comes from America's Test Kitchen, which is worth quoting properly. ATK abandons the flip-once rule after the initial sear: two minutes a side undisturbed, then heat down to medium-low and a flip every two minutes until the crust is built, specifically to prevent "an unattractive gray band of overcooked meat" under the crust, because turning often evens out how much heat each face takes. That is a real flaw with a real fix, and the flipping half of it costs you nothing to try on your second steak.

The other half of ATK's method I would leave until later. It preheats the empty skillet inside a 500°F oven before moving it to the stovetop, leaning on cast iron's heat retention to hold the temperature. It works, and it also means carrying a 500°F pan handle across your kitchen while a steak waits. Learn the burner version first.

After that, thickness. beef-steak.com is clear that steaks over 1.5 inches are better suited to a reverse sear or an oven finish than to straight stovetop cooking, so a thick ribeye is a different job with the same crust rules. And the pan you have just cooked in is full of browned fond, which is the start of a sauce, though The Iron Patina's warning applies: do not deglaze a screaming hot skillet with cold liquid.

Questions that come up at this point

Pink is not a measurement. FSIS states that a beef steak cooked to its 145°F minimum can still look pink in the center, because the color is down to how the myoglobin in the meat has reacted during cooking, and that myoglobin is safe to eat whatever color it ends up. The agency's position is that appearance and the color of the juices are not reliable indicators of either safety or doneness, and that you should use a thermometer instead.

Lodge wants at least 15 minutes out of the fridge and The Seasoned Mom rests hers for 30. The outer limit is FSIS's: no more than 2 hours unrefrigerated, or 1 hour if the room is above 90°F, because bacteria multiply fastest between 40°F and 140°F and can double in as little as 20 minutes. Fifteen to thirty minutes is comfortably within that. ThermoWorks takes the opposite view and cooks the steak straight from the fridge, below 40°F, which is also fine.

The sources split on this. The Seasoned Mom says explicitly not to, because the smoke point is too low, and recommends vegetable or avocado oil. Lodge lists light olive oil as an acceptable alternative to its preferred canola. The number that settles it is WebstaurantStore's: for searing, use an oil with a smoke point over 400°F, which is where peanut, canola, grapeseed and avocado sit.

Not at 1 to 1.25 inches thick. The Seasoned Mom takes a strip that size from raw to rested in 8 to 10 minutes of cooking on the stovetop alone. The oven earns its place as the steak gets thicker: Lodge finishes a 1.5 inch steak with about 4 minutes at 350°F after a 2-minute-per-side sear, and beef-steak.com says anything over 1.5 inches should be oven-finished or reverse-seared rather than cooked through on the burner.

That is overcooked meat just beneath the surface, and America's Test Kitchen treats it as a flipping problem. Its fix is to sear 2 minutes a side undisturbed, then drop to medium-low and turn the steak every 2 minutes, so neither face sits absorbing heat long enough to overcook below the crust. ATK pulls the steak at 120°F to 125°F internal and rests it under foil.
